Pepes Ayam Kemangi (Indonesian Chicken Dish with Sweet Basil) |
Pepes is the way of cooking using banana leaves. The dish is coated with spices and wrapped in banana leaf. Great ingredients for pepes are chicken, fish, and tofu. The dish can be steamed, grilled, or cooked in an oven. The aroma of cooked banana leaves will linger on the dish as an exotic accent.
I am using chicken and sweet basil in this dish. The aromatic banana leaves and the rather sharp tasted sweet basil leaves allow you to devour the dish using not only your sense of taste, but also your sense of smell.
Ingredients
leaves Banana
400 gram chicken
Juice from a half lemon
Salt
10 sweet basil leaves
Spices paste of:
1 teaspoon coriander seed
1 teaspoon pepper
3 garlic
2 big shallots
1 candle nut
2 teaspoons sweet soya sauce
3 spoons olive oil
Method
Cut the chicken into big chunks. Coat the chicken with lemon juice and salt.
Put all the spices in food processor to make spice paste.
On the banana leaf: put the chunks of chicken, the spice paste, and 5 sweet basil leaves and wrap it.
Pre heat the oven into 180 degree and put the wrapped chicken in for 45 minutes.
Serve the pepes on a board. Open the wrap like a present! 😊
